Any sort of salted meat whether pork or beef will do. In the States, you might probably get salted meat in a bucket or in a Caribbean speciality store (if there's any around). If you're really desperate, use chicken (which I don't approve of, but it is done) or, better yet, smoked herring. And if you can't find ANYTHING, don't bother. The most important ingredient is the cocunut milk. Good luck finding salted-meat! P.S. If you can find Caribbean seasoning pepper, it would work allot better than chilli. Dumplings can be added to oil down too. P.P.S. Most Grenada oil downs have a layer of dasheen leaves (or callalou) in it. This may be hard to find.
