Dear Anne-Marrie, It doesn't necessarily have to be pig tail. Any sort of salted meat whether pork or beef will do. In the States, you might probably get salted meat in a bucket or in a Caribbean speciality store (if there's any around). If you're really desperate, use chicken (which I don't approve of, but it is done) or, better yet, smoked herring. And if you can't find ANYTHING, don't bother. The most important ingredient is the cocunut milk. Good luck finding salted-meat!
P.S. If you can find Caribbean seasoning pepper, it would work allot better than chilli. Dumplings can be added to oil down too.
P.P.S. Most Grenada oil downs have a layer of dasheen leaves (or callalou) in it. This may be hard to find. A good substitute is spinach (whole leaves).

THIS IS AN AWESOME SITE!! I AM A WEST INDIAN LIVING IN RENO NEVADA AND IS HOME SICK FOR SOME OIL DOWN. I HAVE ALL THE INGREDIENTS EXCEPT FOR "PIG TAIL". I HAVE NOT BEEN ABLE TO FIND IT ONLINE. HAVE ANY IDEA WHERE I CAN ORDER THIS??
