Hi three ladys & a man,
Hopeful this works for u, I am from St. Thomas and I make them on Saturdays with fry fish or with salt fish:)
Johnny Cake
3 cups flour
1 tablesppon baking opwder
1-1/2 teaspoon salt
2 tablespoon sugar
1/2 cup shortening
2/3 cup water or milk, or enough to make dough
If frying need oil and fryer: If baking need sheet pan
Mix dry ingredients together. Cut in shortening, or rub in with fingers. Add water or milk slowly, just enough to make soft dough. Knead a few times until dough is smoooth and hold together. Let rest for 10-20 minutes. Shape into rounds; flatten in your hand (real islands know the deal) or flatten out, prick with fork. Ensure that you oil is hot if frying and place in fryer. Fry at medium-high heat over stove, turning several times, until brown and crusty on both sides. it should take 15-20 minutes.
If baking bake at 350 until done.
Resting means covering with a clean kitchen towel or just turn a bowl over the dough

Hi jus4hs,
I too am from St Thomas. Could you provide your recipe for the fishcakes as well (and/or saltfish souse will come in handy too).
I like to collect different versions of recipes...it helps me to spice up the ones I currently have.

Hello, Im from the VI also. I have a question. How do you get the johnny cakes to be soft? Ive been making them for a long time and never ever got it to be like those @ the food fair etc. They always come out hard. When I was in school I went to a field trip to Whim Greathouse and their was a older lady there who made johnny cakes in the kitchen to sell. She would sprinkle powder sugar on them--and those were the BEST evah. This was over 10 years ago tho...

Is there much difference between the recipe you posted and the one we have from the Bahamas?
Just curious. I did notice that the quantities are different.

None of the above. The web server is located in Texas. Centrally located, less likely to get hit by a huricane (although some do come though here once and awhile), and the internet service here is very reliable.
The website is available worldwide and all are welcome.
