I didn't want to start a new thread for this. Can you post the recipe for Potato Stuffing? President Carter's mother or wife tasted some V.I. potato stuffing at the Food Fair here and asked for the recipe.

This is good food ... we call it "crab & callaloo" in Grenada ... and we use whole crabs and dasheen leaves for the greens ... yummy yummy ...

Well, you use Irish potatoes or sweet potatoes. Cook, mash, add tomato paste, raisins (optional), seasoning, i.e. minced onion, garlic, herbs, I think an egg, milk. Mix up everything, bake.
I think you add some sugar if using Irish potatoes. I'll get the recipe later today so don't go by this one.
