Pudding and Souse


Use what ever part of the pig u like, clean and boil with salt.

While pork is cooking make pickle

Pickle

cucumber
parsley
salt
hot pepper
onion
sweet pepper
lime

Method

1. grate cucumber, onion and sweetpepper

2. chop parsley and pepper (not to much pepper unless u like it hot)
3. mix 1 & 2 together lime and salt to taste
4. set aside

After pork is cooked drain and add lime to pork ( this is to allow pork to be have its own lime and salt flavor so it does not absorb too much from the pickle mixture and render it useless for when u place on breadfruit or pudding.)

Of course if u have breadfruit cook and set aside.

Not sure if u want pudding ( sweet potatoe) but here goes.

Ingredients

sweet potatoe
seasoning ( thyme, onion chive, marjoram or use ready made bajan seasoning from a bottle)
oil
sugar
butter
coloring (optional)
little salt to balance flavor

Method

1. grate potatoe
2. add all other ingredients
3. set aside to 'draw' :-)
4. taste add additional seasoning to flavor
5. after flavor has been adjusted, place in bowl in a pot of boiling water, turning to cook top or place in a greased covered dish and bake in oven until cooked.

Serve with pickle

Enjoy!!
