Low-Cost Meals and 4 Bean Salad
By Connie Myres
Money is tight in these are hard financial times and I've found that one of the best ways to save money is in meal planning using low-cost meals. Lowering the grocery bill is easier than lowering the mortgage, electric, phone, etc. I'll share with you the recipes I've been using to help out my hungry family. Some are from my mom's recipe box and they bring back memories of my childhood, and others I've found along the way. Please feel free to share any recipes you may have.
These recipes not only save money but are healthy, too! My time is limited so I try not to use recipes that take a lot of time to prepare. Making homemade bread does take some time, but a lot of that time is just in waiting for the dough to rise. Once you get a system down it's no big deal. Speaking of dough, homemade pizza is delicious and lot more filling than the frozen pizza bought from the store. I make the base pizza dough, spread it out on the pizza pan, top with pizza sauce, and then freeze it. And then when the boys are hungry they just need to pull it out of the freezer and add their own toppings. Easy meal preparation is also very important!
4 Bean Salad
This low-cost recipe (from the 1970's?) uses basic ingredients that you probably already have in your kitchen (sugar, vinegar, oil), along with vegetables that you can change to what you currently have available and what you like. It's an old recipe from my childhood that mom had in her recipe box.
1/4 c. water 1 c. sugar 3/4 c. vinegar 1/2 c. salad oil
1 green pepper, diced 1 lg. Bermuda onion 1 can (16 oz) green French Style beans 1 can (16 oz) baby lima beans 1 can (16 oz) yellow cut beans 1 can (16 oz) kidney beans
Mix first four ingredients together. Pour over vegetables and chill.
Connie is a mom with two hungry teenage sons. Her income has drastically changed for the worse so she's found that changing how her family eats saves money, and as a bonus it's healthier, too! More low-cost recipes and meals can be found at http://low-costmeals.blogspot.com
