Grenada Flag Grenada Brown Stew Fish

Preparation Time: 1 hour
Cooking Time: 25 minutes
Serves: 4
Country: Grenada

INGREDIENTS:

1 1/2 Lbs Tuna (you can substitute your fish choice)
1/2 cup white onions chopped
1/4 cup red onions chopped
Sprig of thyme
4 heads of garlic, crushed and finely chopped
2 stalks of scallion - finely chopped
3 cloves
2 large red bell peppers chopped and seeded
1 hot pepper
1 pkt. Grace fish seasoning
Quarter cup olive oil
1 tablespoon of butter
1 box vegetable stock(or 2 Maggi chicken bullion cubes)
4 ozs. flour
salt
Quarter cup lime juice

METHOD / DIRECTIONS:

Cut fish into pieces and wash with lime. Season with salt and half packet of Grace Fish seasoning and set aside.Let stand for about an hour.

In a large skillet add olive oil, butter, chopped onions, garlic, bell peppers and saute stirring constantly. When vegetables start to get soft add flour and stir constantly until mixture gets to a nutty, brown color. Deglaze by adding half box of vegetable stock. Bring to a boil.

Add fish and cook for about 20 minutes before adding scallions, thyme and hot pepper (be careful not to break hot pepper). Check salt. Add stock as needed.

SERVING SUGGESTIONS:

Serve with hot rice or Barbadian coo-coo. Equally great with rice and peas or bread.
