Ingredients for cooking fish:
- 3 lb fish
- 1/4 cup flour
- 1/3 cup oil
Ingredients for sauce:
- 1 cup strips of chocho and carrots
- 2 onions cut onion-ringed style
- 2 scotch bonnet peppers
- a few grains of pimento grains
METHOD / DIRECTIONS:
Clean, scale and cleanse fish with lime. Season thoroughly with salt, pepper and other spices.
Dust fish sparingly with flour. Fry fish in oil. Remove fish from oil when opaque. Boil 1 part water with 1 part vinegar. Toss in pinch of salt and a teaspoon of sugar. Add strips of chocho, carrots, scotch bonnet pepper, onion rings and pimento grains. Bring water to boil, then pour liquid over fried fish. Let fish sit out for a day before eating to allow sauce to penetrate into fish.
