INGREDIENTS:
- Sliced mangoes
- 1/2 medium onion diced
- 1/2 medium green pepper diced
- 2 tbs. Sugar
- 2 tbs. vinegar
- 1 tbs. hot sauce
- 1 tbs. vegetable oil
- 1 tbs. dark rum
- salt & pepper
- 1/8 tsp. cinnamon
- 1/2 cup raisins
METHOD / DIRECTIONS:
In a small sauce pan place oil, onions, green pepper and mango and cook until onions are clear. Add all ingredients except raisins and cook for 15 minutes. Finally, add raisins and cook for 30 minutes. Let cool and store in refrigerator for up to 2 weeks.
