- 450 g (1 lb) tofu (firm)
- 10 ml (2 tbsp) Walkerswood Jerk Seasoning (to taste)
- 1 medium onion, chopped
- 1 clove garlic, minced
- 15 ml (1 tbsp) olive oil
- Vegetables: chop into bite size pieces equal portions (about 1 kg (4 cups) total) of carrots, broccoli, cauliflower, zucchini and tomatoes (cook harder vegetables longer)
METHOD / DIRECTIONS:
Cut tofu into 1.25 cm (1/2 inch) squares and marinate in Jerk Seasoning for at least 1 hour. Stir fry onions and garlic in a large skillet then add hardest vegetables first. Cook slightly then add tofu and the rest stirring gently. Cover and let steam for 8-10 minutes. Serve with brown rice.
