Jamaica Flag Roast Turkey with Jerk Seasoning



Preparation Time: 30 minutes
Cooking Time: 3.5 - 4 hours
Serves: 6-8
Country: Jamaica


6 kgs. turkey
3 Tbsps. Grace Jerk Seasoning
cup honey
2 Tbsps. lemon juice
cup soy sauce


  1. Remove neck and giblets from turkey.
  2. Rinse with cold water and pat dry inside and out.
  3. Carefully loosen skin over breast and tops of legs using fingers without tearing the skin.
  4. Combine Grace Jerk Seasoning, honey, lemon juice, and soy sauce and rub onto turkey and allow to marinate.
  5. Allow stuffing to cool completely before filling the turkey cavity just before roasting.
  6. Place turkey in roasting tin and add water. Brush evenly with oil. Bake at 180 C for 30 minutes, then reduce temperature to 160C for 3 hours.
  7. After one hour, cover turkey with foil so skin does not darken too much.
  8. Turkey is ready when it is golden brown and the juice runs clear when pierced in the drumstick joint with a fork.

To Serve: Serve with gravy, roast potatoes, brussels sprouts and glazed carrots.


Spicy Sausage Stuffing

Country: Jamaica


1.5 kg. lean ground pork
1 clove garlic
cup parsley
1 tsp. salt
tsp. hot pepper sauce
tsp. nutmeg
1 tsp. black pepper
1 tsp. thyme
1 Tbsps. light rum/brandy


  1. Combine all ingredients, blend well and fill the neck cavity of the turkey.
  2. Mould into shape and sew or skewer the skin of the bird.
