Jamaica Flag Ackee and Saltfish

 Recipe      

Preparation Time: 1 hour
Cooking Time: 12 minutes
Serves: 6
Country: Jamaica

INGREDIENTS:

  • 250  grams saltfish 
  • 1  can GRACE ACKEES IN SALTED WATER
  • 1  Tbsp. GRACE VEGETABLE OIL 
  • 1  medium onion 

METHOD / DIRECTIONS:

  1. Put saltfish to soak in cold water for about 1 hour.
  2. Pour off water, add fresh water and cook until tender.
  3. Debone and flake saltfish. Meanwhile, allow Grace Ackees to drain. 
  4. Heat Grace Vegetable Oil and saute onion add flaked saltfish, ackees, and black pepper. 
  5. Toss lightly, cover and allow to stand over low heat for about 2 minutes.

Recipe Note: If bacon is not used, use oil.
