Sweet & Sour Chicken

INGREDIENTS:
- 1.5 kgs. chicken
- 2 cloves garlic
- 2 tsps. salt
- 1 tsp. pepper
- 1 cup flour
- 2 cups oil for frying
- Sweet and Sour Sauce (see recipe below)
METHOD / DIRECTIONS:
- Clean the chicken and cut in bite-size pieces.
- Mince garlic.
- Season with salt, pepper and garlic.
- Coat chicken pieces in flour and deep fry until cooked.
- Add pineapple chunks/ pieces, pour sauce over chicken and serve.
SERVING SUGGESTIONS: Serve with Sweet & Sour Sauce (recipe below).

Sweet & Sour Sauce
Country: Jamaica
INGREDIENTS
- ½ cup GRACE PINEAPPLE SLICES
- 4 slices ginger root
- ¼ cup carrot
- 1½ cups water
- 2/3 cup GRACE WHITE CANE VINEGAR
- 1½ cups sugar
- ½ cup GRACE TOMATO KETCHUP
- 2 Tbsps. cornstarch
METHOD / DIRECTIONS:
- Cut in small pieces pineapple slices. Slice gingerroot and carrot.
- In a sauce pan, combine water, vinegar, sugar and tomato ketchup.
- Add ginger and carrot slices and bring to a boil. Cook slowly for five minutes.
- Dissolve cornstarch in a small amount of water and add to the sauce. Stir until thicken.
- Add pineapple pieces to sauce. Pour sauce over chicken and serve.
SERVING SUGGESTIONS: Serve with Sweet & Sour Chicken.

This recipe was really easy to make and tasted great. The sweet and sour sauce is so much better that you can buy. I substituted red wine vinegar for the white cane vinegar in the sauce. |
