Jamaican Festival with Saltfish & Butter Beans

INGREDIENTS:
1½ cups flour
1 Tbsp. baking powder
1 Tbsp. GRACE HELLO SOFT MARGARINE
1/2 cup GRACE CORNMEAL
1/4 cup sugar
1 tsp. nutmeg
1/2 tsp. salt
1 tsp. lime juice
1/2 cup water
1/2 cup oil (for frying)
METHOD / DIRECTIONS:
In a large bowl, sift flour and baking powder. Add cornmeal, sugar, nutmeg, salt, margarine, lime juice and enough water to bind mixture to a manageable dough.
Leave to set for two minutes.
Heat oil in a frying pan, shape festivals into fingers and fry.
Drain on absorbent paper.

Saltfish and Grace Butter Beans
Country: Jamaica
INGREDIENTS
ĵ cup GRACE VEGETABLE OIL
1 small sweet pepper
2 small plum tomatoes
1 medium onion
250 grams salted fish
2 cans GRACE BUTTER BEANS
1 tsp. garlic powder
2 Tbsps. GRACE TOMATO KETCHUP
METHOD / DIRECTIONS:
Boil, debone and flake saltedfish. Cut sweet pepper in strips, slice onion, and cut tomatoes in quarters.
Heat oil in a frying pan.
Saute sweet pepper, tomatoes and onion, then stir in saltfish.
Add butter beans, garlic powder and tomato ketchup to saltfish mixture.
Heat thoroughly and remove from flame. SERVING SUGGESTIONS:
