Trinidad and Tobago Flag Conch Soup (Trinidad)



Preparation Time: 10 minutes
Cooking Time: 1 1/2 hours
Serves: 4-6
Country: Trinidad and Tobago


cups conch
    8  cups water
    2  cloves garlic
    3  stalks escallion
    1  sprig thyme
    1  cho-cho
    250  grams irish potatoes
    250  grams pumpkin
    2  carrots
    1  whole hot pepper
      tsp. pimento
      cup flour
    2  Tbsps. brandy


1. Combine conch, water, garlic, escallion and thyme. Allow simmering for about 45 minutes or pressure cook for 20 minutes.
2. Peel and cut cho-cho and irish potatoes, pumpkin and carrot in cubes. Place all vegetables in a pot then add Grace Fish Tea Soup Mix, hot pepper and pimento and simmer.
3. Add water to flour to make a smooth elastic dough. Roll into spinners and add to soup. Continue to simmer for 25 minutes or until vegetables are tender.
4. Correct seasoning, remove from flame and add brandy then serve.


Spinners:-Mix flour, water and a little salt to make a dough, then roll small pieces of dough into fingers.
