Trinidad and Tobago Flag Creab Backs (Trinidad)

Country: Trinidad and Tobago

INGREDIENTS:

 8  live crabs or
    1  large can crab meat
    70  grams GRACE HELLO SOFT MARGARINE
    2  cloves garlic
    1  medium onion
    2  tsps. chives
    1  Tbsp. GRACE FISH AND MEAT SAUCE
    1/4  tsp. salt
    1/2  tsp. GRACE HOT PEPPER SAUCE
    4  Tbsps. dry breadcrumbs

METHOD / DIRECTIONS:

1. In a saucepan, saute chopped garlic and onion in margarine for a few minutes.
2. Add flaked crab meat, salt, chopped hot pepper/hot pepper sauce, chives and cook for a few more minutes.
3. Add 2 tbsps breadcrumbs and Grace Fish and Meat Sauce. Combine well.
4. In a clean crab back, pack mixture in and sprinkle with remaining breadcrumbs, dot with butter and place in a hot oven at 190C/375F until margarine melts and there is a nice brown colour.

RECIPE NOTES:

Remove claw, prise them open, pick out flesh or meat. Discard the gall clinging to the shell, remove meat and then scrub the shells. Prepare them for serving.
