Preparation Time: 5-10 minutes
Cooking Time: 1 1/2 hours Serves: 6-8 people Country: Saint Kitts & Nevis
1 green pepper
½ pigs head
2 tsp (10ml) salt
Juice of 4 limes
2 trotters METHOD / DIRECTIONS:
Wash trotters and head thoroughly with lime.
Cook in salted water until tender about 1 ¼ hours. Let cool, slice or cut into pieces.
Slice green pepper and cucumber and chop onion.
Mix all ingredients with some of the stock.
Add pork slices. Leave for a while.
Serve with a tossed salad.

We do not eat pork ... my mom made souse with cow skin and it was served cold ... but pretty much with the same ingredients as yours V ... recall it tasting like pickle ... kinda tart ...

that is one way of doing it. but i prefer using pig feet only. cook it in salt water and garlic cloves all of the ingridientsbut i add fresh parsley and squeeze one lime in the simmer pot we usualy serve it by it self and dip french bread in the sause yummmmmmy
