St. Kitts and Nevis Flag Souse

Preparation Time: 5-10 minutes
Cooking Time: 1 1/2 hours
Serves: 6-8 people
Country: Saint Kitts & Nevis


  • 2 onions
  • 1 green pepper
  • ½ pigs head
  • 2 tsp (10ml) salt
  • Juice of 4 limes
  • 2 cucumbers
  • 2 trotters


  1. Wash trotters and head thoroughly with lime.
  2. Cook in salted water until tender about 1 ¼ hours. Let cool, slice or cut into pieces.
  3. Slice green pepper and cucumber and chop onion.
  4. Mix all ingredients with some of the stock.
  5. Add pork slices. Leave for a while.
  6. Serve with a tossed salad.


Serve hot!!!

We do not eat pork ... my mom made souse with cow skin and it was served cold ... but pretty much with the same ingredients as yours V ... recall it tasting like pickle ... kinda tart ...

that is one way of doing it. but i prefer using pig feet only. cook it in salt water and garlic cloves all of the ingridientsbut i add fresh parsley and squeeze one lime in the simmer pot we usualy serve it by it self and dip french bread in the sause yummmmmmy
