We do not eat pork ... my mom made souse with cow skin and it was served cold ... but pretty much with the same ingredients as yours V ... recall it tasting like pickle ... kinda tart ...
that is one way of doing it. but i prefer using pig feet only. cook it in salt water and garlic cloves all of the ingridientsbut i add fresh parsley and squeeze one lime in the simmer pot we usualy serve it by it self and dip french bread in the sause yummmmmmy
