Preparation Time: 90 minutes Cooking Time: 1 hour Serves: 4-6 people Country: Puerto Rico
INGREDIENTS:
1 pound of ground meat (Beef or Turkey)
3 tablespoons of Olive Oil
1 1/2 heaping tablespoons of sofrito
2 teaspoons of Adobo seasoning (or to taste)
1/2 teaspoon of ground black pepper
1 8oz. can of Goya tomato sauce
1 teaspoon of dry oregano
1 tablespoon of ketchup
10-15 Pimiento-stuffed green olives, sliced in half
1 packet of sazón con culantro y achiote (orange box)
1 teaspoon of sugar
1 bay leaf
1/2 small package of frozen green peas, carrots, and cut corn
7 sweet plantains, peeled sliced in 1/8 pieces (lengthwise) and fried in vegetable oil until golden
1 beaten egg

Fluffy white rice and a side sald
RECIPE NOTES:
Puerto Rico's answer to lasagna: Casserole dish layered with seasoned ground meat and sweet fried plaintains.
