Scrolljoe’s Baked Vermicilli

INGREDIENTS:
- 2 2/3 cups milk
- 1/3 tsp salt
- 1/4 cup sugar
- 2 eggs
- 1/4 cup sugar
- 1/2 tsp essence
- touch of rum
- 4 ounces crushed vermicilli
- fruits
- cinnamon
- nutmeg
METHOD / DIRECTIONS:
- Blend 2 2/3 cups milk, 1/3 tsp salt, 1/4 cup sugar and boil ..stirring constantly to avoid sticking.
- Blend 2 eggs, 1/4 cup sugar, 1/2 tsp essence and touch of rum.
- To that pour about 1/2 cup of boiled milk mixture and blend.
- To remaining boiled milk mixture add 4 ounces crushed vermicilli and boil until soft using low heat.
- After vermicilli mixture is is soft cool a little and add to Blended Egg Mixture.
- Mix well and pour out into a well greased 9 x 6 pyrex.
- Add fruits to batter pushing same below the surface.
- Sprinkle cinnamon and nutmeg over top.
- Let cool a little and bake at 350 degrees for 25 to 30 mins.
