Grace Shrimp Curry

Preparation Time: 15 minutes Cooking Time: 8 minutes Serves: 4 Country: Jamaica
INGREDIENTS:
- 2 Tbsps. margarine
- 1/4 cup finely chopped onion
- 2 cloves garlic, finely chopped
- 1 1/2 Tbsps. all purpose flour
- 1 Tbsp. currry powder
- 1 Tbsp. lime juice
- 1 1/2 cups lemon juice
- 1 1/2 cups *stock
- 1/4 tsp. salt
- 1 tsp. GRACE HOT PEPPER SAUCE
- 1 Tbsp. chopped parsley
METHOD / DIRECTIONS:
- Melt margarine in a heated frying pan, fry onions and garlic lightly.
- Add flour, curry powder and cook for 3-4 minutes, stirring constantly to avoid burning.
- Add lemon juice, stock, salt and Grace Hot Pepper Sauce.
- Stir and allow to cook over low heat for about 3-4 minutes.
- Add more stock if necessary and season to taste.
- Stir in the shrimp and allow to heat thoroughly.
- Garnish with parsley.
SERVING SUGGESTIONS: Serve hot over steamed rice with one or more of the following accompaniments arranged in separate bowls: tomato wedges, raisins, pineapple chunks, shredded coconut, sweet or sour pickles.
RECIPE NOTES:
*To make stock: Cook desired amount of Grace Chicken Noodle Soup Mix according to packet instructions and strain.

| The recipe was not as nice as I thought it would be even though I added the shrimps - maybe there was just too much lemon juice. |
