Vote for your Country in the Battle of the Islands! Pudding of the Gods (Brazilian)

Preparation Time: 10 minutes
Serves: 8-10
Country: Brazil

INGREDIENTS:

  • 1 1/2 packets coconut jelly crystals
  • 3/4 cup warm water
  • 1 can condensed milk
  • 1 1/2 cups whole milk
  • 1 can heavy or whipped cream
  • 2 cups caramel raisin rum sauce

METHOD / DIRECTIONS:

  1. Dissolve the jelly crystals in warm water.
  2. Place all ingredients, including the dissolved jelly crystals in blender.
  3. Blend for about 5 minutes.
  4. Coat a custard dish with Caramel Raisin and Rum sauce.
  5. Pour in the mixture from the blender.
  6. Place in refrigerator overnight.
  7. Unmould immediately before serving.

SERVING SUGGESTIONS:

Serve with a sauce of your choice.

RECIPE NOTES:

Reserve 2 tablespoons Caramel Raisin and Rum Sauce for coating pudding mould.

A quick and tasty dessert for a formal dinner.

Caramel Raisin Rum Sauce

Preparation Time: 5 minutes
Cooking Time: 10-15 minutes
Serves: 4-5
Country: Brazil

INGREDIENTS

  • 1/2 cup sugar
  • 1/2 cup evaporated milk
  • 1/4 cup heavy cream
  • 1/4 cup raisins
  • 3 Tbsps. rum

METHOD / DIRECTIONS:

  1. Place sugar in a small pot on flame to *caramelize.
  2. Add evaporated milk, heavy cream and raisins and mix well.
  3. Remove from flame and allow to cool slightly then add rum.

SERVING SUGGESTIONS:

Serve with your favourite puddings or custards.

RECIPE NOTES:

*Caramelize: to heat sugar to a golden brown colour.
