
Pudding of the Gods (Brazilian)

INGREDIENTS:
- 1 1/2 packets coconut jelly crystals
- 3/4 cup warm water
- 1 can condensed milk
- 1 1/2 cups whole milk
- 1 can heavy or whipped cream
- 2 cups caramel raisin rum sauce
METHOD / DIRECTIONS:
- Dissolve the jelly crystals in warm water.
- Place all ingredients, including the dissolved jelly crystals in blender.
- Blend for about 5 minutes.
- Coat a custard dish with Caramel Raisin and Rum sauce.
- Pour in the mixture from the blender.
- Place in refrigerator overnight.
- Unmould immediately before serving.
SERVING SUGGESTIONS: Serve with a sauce of your choice.
RECIPE NOTES:
Reserve 2 tablespoons Caramel Raisin and Rum Sauce for coating pudding mould.
A quick and tasty dessert for a formal dinner.

Caramel Raisin Rum Sauce
Preparation Time: 5 minutes Cooking Time: 10-15 minutes Serves: 4-5 Country: Brazil
INGREDIENTS
- 1/2 cup sugar
- 1/2 cup evaporated milk
- 1/4 cup heavy cream
- 1/4 cup raisins
- 3 Tbsps. rum
METHOD / DIRECTIONS:
- Place sugar in a small pot on flame to *caramelize.
- Add evaporated milk, heavy cream and raisins and mix well.
- Remove from flame and allow to cool slightly then add rum.
SERVING SUGGESTIONS: Serve with your favourite puddings or custards.
RECIPE NOTES:
*Caramelize: to heat sugar to a golden brown colour.
