Antigua and Barbuda Flag Bread Pudding

Country: Antigua and Barbuda


  • 2 cups milk
  • 4-8 slices of bread - spread with margarine and cut into cubes
  • 2 eggs
  • 1/4 tsp. lemon/lime rind
  • brown sugar to taste
  • 1 tsp. vanilla essence


  1. Grease pudding dish, place buttered bread cubes in a bowl, pour on milk, sugar, rind and essence, fold lightly.
  2. Add beaten eggs, fold.
  3. Place half of the mixture into a greased dish, spread with favourite dried fruits (including the Antigua Black Pineapple), pour the remainder of the mixture in.
  4. Place in a preheated over 250 to 275 degrees F.
  5. Bake until set.

Optional: Spread top of bread mixture with favourite jam, top off with meringue and bake.
