The Bahamas Johnny Cake

Country: Bahamas

INGREDIENTS:

1 Cup flour
3/4 cup cornmeal
3/4 tsp. salt
1 egg, beaten
5 tsp. baking powder
1/3 cop sugar
2 Tblsp. vegetable oil
1 cup milk

METHOD / DIRECTIONS:

Preheat oven to 350F. Mix all dry ingredients together. Add egg, milk and oil to dry mixture and blend well. Pour into 8 inch square pan. Bake 30-35 minutes until slightly brown on top. Serve hot or cold with butter, honey or preserves.

I made this recipe last night and I like it a lot! Quick and easy to make. It goes so well with butter I haven't even tried jam. I prefer it warm. It is soft and the butter soaks in well. It is also a nice light snack.

I use Turbinado sugar or brown sugar. It gives it a sweeter taste - no too much, but tastier than white granulated sugar. I use "Pam" non stick spray in my pan. My family eats it up, but I still desire the Johnny Cake recipe that is more on the bread side and not cornmeal.
