Vote for your Country in the Battle of the Islands! Ashanti Natural Fruit Cake

Preparation Time: 30 minutes
Cooking Time: 1 hour
Serves: 1 cake


  • 2 cups Grace Vegetable Oil
  • 3⁄4 cup Dark Sugar
  • 6 tablespoons Egg Replacer
  • 4 cups Whole Wheat Flour
  • 1 teaspoon Baking Powder
  • 2 teaspoons Cinnamon Powder
  • 1 cup Roots Wine
  • 3 cups Grape Juice
  • 1 tablespoon Almond Flavouring
  • 1 tablespoon Lime Juice
  • 1 tablespoon Vanilla
  • 1⁄4 cup Mixed Nuts
  • 2 cups Mixed Fruits
  • 3 tablespoons Molasses


  • Blend the Grace Vegetable Oil along with the sugar.
  • Combine dry ingredients.
  • Combine all the liquid ingredients and mix well.
  • Add the dry ingredients to the sugar mixture alternately with the liquid ingredients and fruits.
  • Scrape batter into a 10'' greased or lined baking tin and bake in a pre-heated oven at 180C/350F for approximately one hour or until done.


    Cake can also be steamed on top of the stove.
