
Easy Christmas Pudding

INGREDIENTS:
- 3⁄4 Cup grace hello margarine
- 1 Cup brown sugar
- 2 Medium eggs
- 1⁄4 Cup mixed peel, chopped
- 1 1⁄4 Cups raisins, chopped
- 1⁄4 Cup nuts, chopped
- 4 Cups red wine
- 1⁄4 Cup brandy
- 1⁄2 Teaspoon grace browning
- 1⁄2 Cup cake and pastry flour
- 3 Cups breadcrumbs
- 1 Teaspoon mixed spice
- 1 Teaspoon lime/lemon rind
- 1 Teaspoon lime/lemon juice
METHOD / DIRECTIONS:
- Pre-heat oven to 150°C/300°F. Cream margarine and sugar together until light and fluffy. Gradually beat in eggs.
- Combine mixed peel, chopped raisins, chopped nuts, wine, brandy and Grace Browning, then set aside.
- Mix together the flour, breadcrumbs and mixed spice. Add to the creamed mixture, along with wine, brandy and fruits.
- Add the remaining ingredients and beat thoroughly. Scrape into a greased and lined 9" cake tin.
- Cover tin with foil and place in a water bath in the oven. Bake for 1 hour or until done.
- Serve with Butter Brandy Sauce.

Butter Brandy Sauce
Preparation Time: 5 minutes Serves: 2-3 servings
INGREDIENTS
1⁄4 Cup grace hello margarine
1 Cup icing sugar
3 Tablespoons brandy
METHOD / DIRECTIONS:
Cream together Grace Hello Margarine and icing sugar until light and creamy; then beat in the brandy. Chill well and serve with your favourite dessert.
RECIPE NOTES:
This sauce melts in the mouth and leaves the lingering warmth of brandy.
