Vote for your Country in the Battle of the Islands! Vanilla Plain Cake

Preparation Time: 20 minutes
Cooking Time: 1 hour
Serves: 10 slices


  • 12 Ounces flour
  • 1 Teaspoon baking powder
  • 2 Large egg yolks
  • 4 Ounces grace hello margarine
  • 6 Ounces granulated sugar
  • 2 Cups milk
  • 1 Teaspoon vanilla essence
  • 2 Large egg whites, stiffly beaten


  1. Grease and flour a 20 cm (8 inch) cake tin; pre-heat oven to 180C (350F).

  2. Sift the dry ingredients together. Set aside.

  3. Place the margarine in a mixing bowl. Using the paddle attachment, beat the margarine until it is smooth and fluffy.

  4. Add the sugar, then cream the mixture at medium speed until the mixture is also light and fluffy for about 10 minutes.

  5. Add the egg yolks one at a time ensuring each is fully incorporated before adding the other. Mix until fluffy. Scrape down the sides of the bowl.

  6. Combine milk and vanilla essence.

  7. Add of the sifted dry ingredients alternately with a third of the liquid ingredients until all ingredients are used.

  8. Gently fold in stiffly beaten egg whites.

  9. Scrape batter into prepared cake tin. Bake in pre-heated oven until done.


For an easy dessert, slice and top with your choice of chocolate or butter scotch sauce or soft caramel custard.


How to separate eggs: Crack the point of the egg gently with a metal fork; shake the egg allowing the white to drop into a bowl, while the yolk stays in the shell. Open the shell and place egg yolk in a separate bowl.
