Vote for your Country in the Battle of the Islands! Traditional Light Cake

Preparation Time: 15 minutes
Cooking Time: 1 hour
Serves: 10 slices


  • 1 Pound (450 Grams) grace hello margarine
  • 1 Pound granulated sugar
  • 6 Medium eggs
  • 2 Pounds all purpose flour
  • 2 Tablespoons (30 Millilitres) baking powder
  • 1 Cup (250 Millilitres) grace orange juice


  1. Cream Grace Hello Margarine and sugar for about 30 minutes or until light and fluffy. Add eggs one at a time, beating well after each addition.
  2. Sift flour and baking powder and add alternately with Grace Orange Juice.
  3. Scrape batter into greased cake tin and bake at 180C/350F for about 1 hour or until done.
Notes 6-8 medium eggs may be used.
