Use a vegetable peeler to obtain broad thin lengthwise strips from carrots. Roll carrot strips individually and fasten with a toothpick. Place in a bowl with ice water for about ˝ hour or until carrot curls hold their shape.
Cut cucumbers lengthwise, deseed and cut into half moon discs. Chop parsley.
Remove carrots from ice water; discard toothpicks.
Tear lettuce leaves and lay on service platter. Toss carrot curls, cucumber discs and chopped parsley. Arrange on lettuce leaves.
Serve with your favourite salad dressing.
The denser the carrots the more attractive the curls.
