The "Bull"

Preparation Time: 25 minutes Cooking Time: 10-15 minutes Serves: 6 persons
INGREDIENTS:
1 Cup (250 Millilitres) grace coconut milk
3 Cups (375 Millilitres) water
2 Cups (450 Grams) brown sugar
2 Teaspoons (10 Millilitres) vanilla
1⁄2 Teaspoon (2 1⁄2 Millilitres) mixed spice
1⁄2 Teaspoon (2 1⁄2 Millilitres) cinnamon powder
1⁄2 Teaspoon (2 1⁄2 Millilitres) nutmeg
1⁄4 Teaspoon (1 1⁄4 Millilitres) salt
2 Cups (400 Grams) grace cornmeal
4 Tablespoons (60 Millilitres) raisins
3 Tablespoons (45 Millilitres) lime juice
1 Tablespoon (15 Millilitres) wine/rum (optional)
METHOD / DIRECTIONS:
Combine Grace Coconut Milk with one cup water.
Sweeten with sugar, add vanilla, mixed spice, cinnamon powder, nutmeg and salt and bring to a boil.
Mix Grace Cornmeal with the remaining water. Scrape into the Grace Coconut Milk mixture, stirring constantly until thickened.
Reduce flame to medium, add raisins, lime juice and wine/rum and stir occasionally until cooked.
Mould into greased custard cups 4"x2" (10 cm wide x 5 cm deep) and place on serving dish.
SERVING SUGGESTIONS:
Serve with warm or cold Orange Glaze.
