Serves: 4 persons
- 2 Cans grace premium mackerel in brine, drained
- 1 Can grace pineapple slices
- 1⁄2 Cup grace vinegar
- 2 Ounces brown sugar
- 1 Tablespoon soy sauce
- 2 Tablespoons cornstarch
- 2 Medium onions, chopped
- 1 Small sweet pepper, julienne
- 2 Stalks escallion, chopped
- 2 Small tomatoes, diced
METHOD / DIRECTIONS:
Flake the GRACE MACKEREL in BRINE into large pieces. Set aside.
Drain and reserve liquid from GRACE PINEAPPLE SLICES. Cut pineapple slices into small dices.
Combine pineapple liquid, GRACE VINEGAR and sugar.
Dissolve cornstarch in soy sauce, add to pineapple juice mixture, pour into a saucepan and heat over a medium flame, stirring constantly, until clear and thick.
Add chopped onions, julienne sweet pepper, chopped escallion, diced pineapple slices and diced tomatoes, simmer for 4 minutes.
Add GRACE MACKEREL in BRINE and cook until heated thoroughly.
Serve over hot cooked GRACE RICE or GRACE SPAGHETTI with an arranged vegetable salad
