Vote for your Country in the Battle of the Islands! Sorrel Christmas Pudding

Cooking Time: 1 1/2 hours
Serves: 8 slices

INGREDIENTS:

  • 1⁄2 Pound raisins
  • 1⁄2 Pound prunes, pitted*
  • 1⁄2 Pound currants
  • 1⁄4 Pound mixed peel
  • 2 Bottles grace tropical rhythms sorrel ginger
  • 1 Cup red wine
  • 1⁄2 Cup rum
  • 1 Pound grace hello margarine
  • 1 Pound granulated sugar
  • 8 eggs
  • 3 Tablespoons grace browning
  • 1 Teaspoon orange rind
  • 4 Teaspoons vanilla
  • 2 Teaspoons almond essence
  • 2 Teaspoons lime juice
  • 1 Pound flour
  • 1⁄2 Pound bread crumbs
  • 3 Teaspoons baking powder

METHOD / DIRECTIONS:

  1. Blend fruits in one bottle of Grace Tropical Rhythms Sorrel Ginger, red wine and rum, then set aside.

  2. Cream Grace Hello Margarine and sugar until light and fluffy. Add eggs gradually and beat in thoroughly.

  3. Add Grace Browning, orange rind, vanilla, almond essence and lime juice to the creamed mixture.

  4. Add blended mix fruits to the mixture.

  5. Combine flour, bread crumbs, baking powder and mix well.

  6. Add 1/2 of the dry ingredients to the creamed mixture while cutting and folding. Use some of the other Grace Tropical Rhythms Sorrel Ginger to adjust consistency.

  7. Add remaining dry ingredients to the mixture and remaining Grace Tropical Rhythms Sorrel Ginger. Mix well.

  8. Pour batter into a prepared baking tin and put to bake at 180C/350F for 1 hour or until done.
