INGREDIENTS:

  • 1/2 lb salt fish, cooked*
  • 1/2 tsp fresh hot pepper, finely chopped
  • 1 sweet pepper, finely chopped (small-medium)
  • 1-2 large tomatoes, finely chopped
  • 1 onion, finely chopped
  • 1-2 tbs oil

METHOD / DIRECTIONS:

  1. Break cooked fish into small pieces.
  2. Blend with remaining ingredients.

*cook fish in pot of water, removing all traces of salt.

Serve on a salt bread or with eclipse crackers.

Those who live overseas, I believe fresh french bread or regular crackers would work just as well.

SERVING SUGGESTIONS:

Serve with sliced avocado.
