To make Coconut mixture...
Cook for 15 to 20mins: 1 or 2 grated coconuts, cinnamon powder, all spice and 6ozs sugar [to own taste -- may add vanilla & almond essence]
To make dough:
§ Warm milk, and mix with shortening, magarine/butter, eggs and yeast
§ Add flour, 2 tbls sugar and salt
§ Knead dough -- set aside for 15 mins.
§ Knead again and set aside for an additional 15 mins
§ Cut dough into 2½oz pieces and roll out ¼ inch thickness
§ Place coconut mixture in center of dough pieces
§ Roll pieces -- place seam at bottom
§ Leave to set for 20 mins
*Mix sugar and water, and glaze before placing in oven
§ Place roll pieces on baking sheet
§ Bake at 350°
Note: To half recipe -- use 5 cups of flour to half of ingredients
