Vote for your Country in the Battle of the Islands! Turnovers

INGREDIENTS:

  • 1 or 2 coconuts
  • 8 ozs shortening (Crisco)
  • 4 ozs magarine/butter
  • 5 lbs flour
  • 6 ozs sugar
  • 1½ pt milk
  • 2 eggs
  • 3 ozs yeast
  • salt

METHOD / DIRECTIONS:

To make Coconut mixture...

  1. Cook for 15 to 20 mins: 1 or 2 grated coconuts, cinnamon powder, all spice and 6ozs sugar [to own taste -- may add vanilla & almond essence]

To make dough:

  1. Warm milk, and mix with shortening, margarine/butter, eggs and yeast
  2. Add flour, 2 tbls sugar and salt
  3. Knead dough -- set aside for 15 mins.
  4. Knead again and set aside for an additional 15 mins.
  5. Cut dough into 2½ oz pieces and roll out ¼ inch thickness

Then:

  1. Place coconut mixture in center of dough pieces
  2. Roll pieces -- place seam at bottom
  3. Leave to set for 20 mins
  4. Mix sugar and water, and glaze before placing in oven
  5. Place roll pieces on baking sheet
  6. Bake at 350°

RECIPE NOTES:

Note: To half recipe -- use 5 cups of flour to half of ingredients.
