Vote for your Country in the Battle of the Islands! Pumpkin Fritters

INGREDIENTS:

  • 1 1/2 cups cooked mashed pumpkin
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/8 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 1/4 cup milk
  • 1 cup all-purpose flour
  • Oil, for frying

METHOD / DIRECTIONS:

Combine and hand stir all the above ingredients except oil in a mixing bowl. [Try not to over mix]. Heat oil, and drop by teaspoonfuls into pan and cook 1 to 2 minutes on each side. Drain on paper towels.

SERVING SUGGESTIONS:

Serve hot or cold.
