INGREDIENTS:
- 6 green bananas
boiled and mashed
(2 day old bananas work well. The texture is smoother when you mash them, but they're not sweet)
- 1 tbsp of butter
- Finely chopped small onion,
- 2-3 cloves of garlic,
- 1 stalk of cyve or green onions or whatever you call that long green herb, and
- 1-2 sprigs of parsley
- Grated cheese is optional (I did not use it in my recipe)
- salt & pepper to taste
- olive oil
METHOD / DIRECTIONS:
Mix all ingredients and use
2 tablespoon of mixture to form a cylindrical, finger-type shape.
Add about 1/2 inch of olive oil in shallow frying pan and fry until dark brown all over. (do not deep fry).
SERVING SUGGESTIONS: Serve with stewed codfish,
sweet plantains and cristophene/carrot medley.
