Jamaica Flag Jerked Porkchop encrusted with sweet Potato

Country: Jamaica


2 reg. porkchops,Jerk Seasoning(paste)some freshly ground pepper,salt to taste,1 pound mashed potato,pinch of nutmeg,walnut size grated ginger,salt &pepper to taste,1 tablespoon butter
jerk sauce: 1onion(slices)table spoon Olive Oil,sweet pepper(1/2 finely sliced)1 cup chickenstock


marinate the pork chops for 30 min in the Jerk paste(Grace) ,after this season with Salt &Black Pepper to taste,brown pork chops from both sides,cook to nearly done,spoon the mashed&seasoned sweet potato on top of each Pork chop ,1/4 of inch,baste with the melted butter
finish under broiler until golden brown,serve with a jerk sauce on the side and some grilled Mango.
i a small saucepan melt onions,ad sweetpepper,one tablespoon of Jerkpaste and the chickenstock,simmer 10 min. and reduce a bit


serve ea. on a single plate some sl. of grilled Mango,deep fried plantain chips,spoon sauce on the side
